Subterranean History: Venturing north of Paris, we found ourselves deep within the heritage of France. The caves at Taittinger and Ruinart were a sensory shift - enjoyably crisp, subterranean galleries exuding centuries of character. Between the historic cellars, we found the heart of the region at a local wine bar, where the service was as refreshing as the glass.
